You are hosting a barbecue party at home. While your barbecue is still being cooked outside with the boys, you discover that many early birds started gathering in your patio. You are a little distracted as you prepare the other kinds of food you wish to prepare because you want to entertain the people who just arrived. You were determined to make the dish and so you went running to the notebook of recipes your grandmother gave you. You have been very good at cooking this dish way back in college. But you seem to have forgotten how to do it over the years. Browsing through the notes, you wish you remembered all the steps on how to do it by heart. Thankfully, you were able to find the recipe. Here it goes:
Ingredients:
2 bell peppers, one yellow and one red
1 tub fresh mozzarella, preferably the cherry sized
olive oil
salt and pepper and/or seasoning that you like
3-4 fresh basil leaves
Instructions:
1. Prepare the oven to broil. Then line a baking sheet along with a foil. Put the peppers on the foil and then put them under the broilers. As you see the peppers turning black, rotate them with the use of a tong. Keep turning peppers until the skin is completely charred. Put the peppers in a brown paper bag or in a large zip lock bag. Seal. Let steam for 10 minutes. Put peppers to a cutting board and then leave it there first.
2. Skins will slip off easily as soon as peppers are cooled. Remove all skins and then cut peppers in half, removing stem carefully so peppers don’t tear. Take out the seeds with care. Slice each pepper half into about 5 or 6 strips. Season pepper strips.
3. Take out the water from the Bufala Mozzarella balls. Place mozzarella in small bowl and drizzle some olive oil on them. Sprinkle some salt and pepper and/or your seasoning and toss.
4. Wrap each Bufala Mozzarella ball with a strip of pepper. Have a toothpick hold it in place and put them in a serving platter. Repeat the same procedure to the remaining balls. Slice some fresh basil, if you like, into chiffonade and sprinkle over the appetizers.
