As you move further south in Italy you will find that the cuisine changes.  In the south there is more fish used.  Often this brand of Italian food is called Mediterranean food.  The dishes here are much lighter and are healthier in general.  The people in the southern half of Italy are amongst the healthiest in the world and it is due in great part to the types of Italian food that they eat.  One of the reasons this Italian food is so healthy is because they use olive oil to cook most of their food in.  One of the great misconceptions about Italian food is that it uses too many spices in overwhelming quantities.  This misconception probably arises out the importation of Italian food to America where it is often cooked by people who have never been to Italy, much less eaten authentic Italian food.  While spices are used in Italian food, they are meant to be an accent to the natural flavor of the dish.  The fact that Italian food is seasonal makes it less likely to rely on heavy spices since there is a strong fresh flavor about the meats, sauces, and pastas.  However, travelers will find that the food in the northern regions of Italy do use a little more spice in their Italian food than the southern regions.So, when thinking of Italian food it is important to remember that there is no national standard of the cuisine.  With nineteen regions there is a vast diversity in dishes.  Each region boasts their own unique take on Italian food, showcasing their native crops and livestock.  However, all throughout the country travelers will taste that certain something; will feel that comforting familiarity; that makes Italian food one of the most popular cuisines in the world.

Italian food is one of the most popular cuisines in the world.  It has long been an American favorite and there are countless Italian food restaurants throughout the United States.  While Italian food was first brought to this country by immigrants and ma and pop shops, like everything else in this country Italian food franchises are quickly defining this country’s perception of Italian food.Probably the first and most well known of these franchises is the Olive Garden.  The Italian food served here is heavy on spices and thick, creamy sauces.  The salad is dressed with Italian dressing and served with breadsticks.  Popular dishes include ravioli, lasagna, and minestrone.  While this restaurant has done a great job of introducing people to the concept of Italian food, the food served here is a far cry from the real thing.  The salad dressing and breadsticks served here would never be found in Italy.  Since the menu is the same year round fresh ingredients are not a priority and hence the dishes are heavily seasoned to hide the fact that the underlying ingredients hold little flavor.  Sadly, many people’s views of Italian food and the stereotypes surrounding this cuisine are only furthered by this Italian food restaurant.

 

However, there are other large chain Italian food restaurants.  Places like Macaroni Grill, Carino’s, Buca di Beppo, and Carrabba’s give a much better Italian food experience.  While the Italian food served at these places certainly doesn’t live up to the high standard of Italian food set by those who originated it, the food is still quite good.  The ingredients at these restaurants are of a higher quality and the dishes are closer to an authentic flavor.  Carino’s is a great restaurant to go to for a casual meal.  Macaroni Grill and Carrabba’s are a little nicer and are great restaurants for an Italian food date.These restaurants don’t rely on pastas with overly seasoned heavy sauces to convince you that you’re eating Italian food.  They use a wider variety of ingredients that are more true to the spirit of Italian food.  Buca di Beppo is a great family Italian food restaurant.  The décor is that of an Italian home and the meals are served family style.  It is recommended that you find some friends or family that enjoy Italian food to share with because the portions are quite large.While Italian food chains are certainly not the best way to experience Italian food, they have come a long way and more and more restaurants are raising the standard to bring good quality Italian food to the general public that can’t afford a plane ticket to Italy.  More chefs are venturing out and trying new things with Italian food and the results are absolutely mouth watering.  Italian food will always be popular in the United States.  Just realize that when eating out at franchise restaurants you will never be able to replicate the flavor and quality of authentic Italian food made by Italians using recipes that have been passed down through the generations.

Let’s Eat!

I was mistaken when I thought I would be eating mostly Latin food but Costa Rica has a phenomenal diversity in the foods that it serves.  You would be surprised to find that there are many Asian restaurants and just as many European restaurants.  The food is plentiful and the cost is reasonable.  Of course every fine hotel has a restaurant on the premises but you will want to eat at the local restaurants.In San Jose there are quite a few fine restaurants.  Ristorante Bohemia is a fine European restaurant that serves a formal European dinner with a fine wine list.  While looking for restaurants to try out, I repeatedly found Tin Jo’s on the list.  This is a restaurant that seems to have stood the test of time and is still in business.  The food is considered Pan Asian and you can find Chinese, Japanese, Thai, and even some East Indian food.  The deserts are delicious.I once went to a Cuban restaurant and found out the hard way that not all Latin food is like Mexican food.  I embarrassed myself and asked for chips and salsa.  Big oops, I got a dirty look for that one.  The same is true of Costa Rica; don’t go expecting the native food to be like Mexican food. It could be considered bland and is healthier than the Mexican food that we usually eat here in the States.  Costa Rican food is considered healthier because it is more fresh and natural.  No canned peas here!

 

The nicest thing about eating in Costa Rica is that all fruits, vegetable, and seafood are very fresh.  In some cases the beef and pork are actually fresh as well. In all restaurants the juice served is usually fresh.  It seems that it is cheaper to serve fresh rather than frozen.  Many smaller restaurants actually grow their own fruits, vegetables, and herbs There is also the cheese made by the Quaker community from Monteverde and if you travel through Monteverde you will get a chance to meet the Quakers.  .  One thing that I have to have in the morning is a hot cup of coffee.  I don’t care if the weather is hot or not, I must have a cup of hot coffee to get moving in the morning.  One nice thing is that Costa Rica produces a fine crop of coffee.  You may want to stock up and take bags of coffee home with you as gifts for friends and family.  Many of the hotels are located on either old coffee plantations or on actual functioning coffee plantations. One of the local dishes is Ceviche, which is wonderful and is made from seafood.  I make my own version here at home with cooked shrimp and crab.  One of the delicacies found in most salads is Hearts of Palm.  I think that is great, especially since I love Hearts of Palm.  Here in the states they are expensive and I haven’t had any for quite some time.

 

As with any Central American country, Plantains are a staple it the diet of Costa Ricans.  When I was a kid my Puerto Rican friend was served fried Plantains for breakfast made by her mother.  I was shocked to see her put ketchup on a fried banana.  Well I soon found out that Plantains are in the banana family but they are used more like potatoes.Because of all the fresh produce available, Costa Rica is a heaven for vegetarians or those with vegan diets.  You will find many vegetarian restaurants available for your dining pleasure.  Most of the big hotels have buffets and you can always eat at these but you will do yourself a disservice if you don’t try the local cuisine with it being as fresh and original as it is.  There are a many Americans and others that come to Costa Rica and open up businesses.  No matter where you are in Costa Rica, get out and try the food.  Visit someplace new every day.

The Term Sparkling Wine Refers To Wine That Has Been Carbonated

While many people who make their own wine prefer to make wine that is suitable for everyday drinking with meals, there may be times when we you wish to make something more special that would be suitable for special occasions and parties. The obvious choice is sparkling wines. If you have considered making sparkling wines but have been intimidated by the thought because it seemed too complicated, rest assured that it is not nearly as complicated as it might at first seem.

The term sparkling wine refers to wine that has been carbonated. Many people think of sparkling wine as champagne; however, the word champagne is used to refer to sparkling wine that is produced in the Champagne region of France. In Spain, this version of sparkling wine is known as Cava and in Italy it is known as Prosecco.

Regardless of the different names that are used to refer to sparkling wine, the same age-old process can be used to make sparkling wine at home. The basic process calls for beginning with white wine and adding sugar and yeast to the mixture. The wine is then corked so that carbon dioxide will begin to build up. Since the bottle is corked, the bubbles will then become forced back down into the wine.

The process really is quite simple and there is no reason why you cannot begin producing your own version of sparkling wine at home with a few bottles, some sugar, a lemon and some yeast along with your own white wine.  Remember that your bottles will need to be sanitized first. While the bacteria that may grow in bottles that have not been sanitized will not necessarily hurt you, it will definitely affect the taste of your wine and could ruin the entire batch.

The first step in the process is to make your white wine somewhat more acidic. The acidity of the wine will give it a texture that is more flavorful and overall crisper. To do this, add the juice of one lemon per twenty-five ounces of white wine.

The next step is to add in the yeast and the sugar. Both of these items are necessary in order for the carbonation to occur. You must make sure that your measurements are exact; however, when you add the sugar into the wine. If you use too much sugar the result will be too much carbonation. This can actually cause the bottles to explode so you want to make sure you use only one teaspoon of sugar per twenty-five ounces of wine.

After you have added the sugar into the wine, you will then need to add in the yeast. You will only need to add ¼ teaspoon yeast into the wine and sugar mixture. Make sure that you sprinkle the yeast carefully into the wine; do not just dump it into the wine. Now, using a large spoon, stir the mixture to be sure the sugar and yeast become well combined. You may even note that the carbonation process has already begun to occur.

Now, it is time to bottle the mixture. To achieve successful results, the mixture must be properly bottled. The biggest mistake in making sparkling wines is to pour the mixture into a bottle and stick in a cork. Many home brewers prefer to use what is known as swing cap bottles that contain a metal rod attached to the cork. Once the cork has been inserted into the bottle, the rod can be locked into place. This works to pressurize the contents inside the bottle. You can purchase these types of bottles at most home brew stores as well as online.

When you pour the wine, be sure to leave about two inches of space in the neck of the bottle. This will allow plenty of room for the pressure to build as the carbonation process occurs. If you do not leave enough space, the pressure will have nowhere to go and you could end up with exploding bottles. Once the bottles have been filled, they should be placed in a location that is cool and dry. Generally, they should remain there for between one and two weeks. When you are ready to drink the wine, do make sure that you chill it first.

Poblano peppers are the biggest peppers used in Mexican food. They can be mild or hot and are often used in a sauce. Ancho peppers are dried Poblano peppers. They carry a mild flavor and are reddish-brown in color. Ancho peppers are the most common chile peppers used and commonly found in sauces.

 

Another pepper that is found in Mexican cuisine is the Fresno pepper. It looks like a smaller version of a sweet green pepper. You can find them in guacamole and also in dishes that include black beans. Chipotle peppers are another pepper found in Mexico. It is gaining popularity in the United States. It is actually Jalapeno peppers that are dried by being smoked. They add a smoky flavor to dishes. One other pepper is the Serrano. They are bright green in color with a very spicy hot taste. They are often used in salsa.  You can find dishes using different chiles such as chilate. Chilate is a drink that includes chile peppers, chocolate, and toasted ground corn with water. Another food is Chilis en nogada. It consists of green peppers that are stuffed and fried and covered with cream and pomegranate seeds.  You will be able to find many recipes which include chile peppers. Remember that when handling and cutting the peppers, use gloves because the heat of the pepper can bother your skin and throat. Also try all you can to not rub your eyes.
