  • To get the most from your ribs you will need to marinate them. This should be done in a fridge and not at room temperature.

  • If there is a membrane on your ribs you will need to remove this before cooking. Leaving the membrane on will probably prevent the flavour from circulating the meat. When you remove this you will have to make sure you use a sharp knife.

  • You might want to put your pork ribs on the barbecue and if this is the case then you will probably want to make sure that you coat the grill with oil before cooking. This will stop the ribs sticking.

  • Cook your ribs slowly over at least five hours. Trying to cook them too quickly could mean that you end up with something that doesn’t taste too good.

What Now For Scottish Pig Farmers?

On Thursday 3rd March Scottish pig farmers took part in a national rally at Downing Street in an exhortation to politicians to curb the rocketing costs associated with pork production.

A rapid increase in feed costs, coupled with a growing stranglehold on the industry by a small number of retailers, has left many farmers struggling to make ends meet.

The UK leads the world in terms of welfare-friendly pork production but if a higher level of support from the country’s leading retailers is not forthcoming then unfortunately more and more pig farmers in Scotland could be forced to diversify into other areas, according to those present at the rally.

At the rally outside Downing Street, John Picken voiced his concerns for his industry’s future should swift and effective action not be taken whilst also taking the opportunity for their support and the considerable weight that they have thrown behind the farmers’ cause.

“The tremendous publicity around this rally and the reaction to our recent banner campaign shows that we continue to have the backing and support of the Great British public,” he said.

“They want to be able to buy our pork, bacon, ham, sausages and pies but for that to happen we need some supermarkets to wake up to the damage that their pricing, sourcing and import policies are wreaking on pig farmers at this time.”

According to Mr. Picken more than half of the total pork sold in this country is imported from overseas, from systems which often do not meet the same standards as are required by law in the UK.

Many of the pork recipes a lot of us will have been raised on would have been made using pork reared and butchered in Britain and, irrespective of where the meat originated, it is of crucial importance that welfare conditions for the animal have been respected.

The welfare levels for the pigs which will ultimately sit in our supermarkets and on our plates are extremely important. When you next decide to cook your best loved pork loin recipes, maybe think about the farmers, in Scotland and elseweher in the UK, who are suffering financially to ensure that only the highest quality pork products reach your table.

So what does the future of the Scottish pork industry look like?

The bottom line is that retailers, large or small, respond to their customers. If we want to save a globally respected industry from massive decline then we, the consumers, in conjunction with the industry itself, retailers and politicians, most continue to demand this excellence.
